Celui ci \u00e0 d\u00e9cid\u00e9 de s&#8217;exiler \u00e0 Las Vegas sous les conseils de Christophe Michalak et il fait son bout de chemin l\u00e0 bas. A chacune de ses cr\u00e9ations ou sculpture en chocolat&#8230; je suis envout\u00e9e.<\/p>\n<p>Dans cette recette de la noix de coco sculpt\u00e9e, j&#8217;ai apport\u00e9 quelques modifications par envie gustative et aussi pour simplifier le process afin de pouvoir proposer un g\u00e2teau plus rapide \u00e0 faire. Ajoutez <strong>203g<\/strong> de farine T45, <strong>17g<\/strong> de sucre, <strong>3,5g<\/strong> de sel et <strong>107g<\/strong> d&#8217;oeufs.<\/p>\n<p>Avec le crochet, commencez \u00e0 p\u00e9trir la p\u00e2te \u00e0 vitesse moyenne pendant <strong>2min<\/strong>. Dans une r\u00e9cipient faire fondre <strong>41g<\/strong> de beurre au micro onde et le laisser refroidir.<\/p>\n<p>Ajoutez le beurre fondu froid et <strong>1g<\/strong> de zeste de citron. Augmenter la vitesse du batteur et battre jusqu&#8217;\u00e0 ce que la p\u00e2te se d\u00e9colle des parois. D\u00e9barrassez dans une poche \u00e0 douille.<\/p>\n<p>Dans un moule demi sph\u00e8re de <strong>3cm<\/strong> de diam\u00e8tre, remplir les <strong>3\/4<\/strong> du moule de p\u00e2te \u00e0 baba. Etuvez le moule \u00e0 <strong>35\u00b0C<\/strong> \u00e0 <strong>85%<\/strong> d&#8217;humidit\u00e9 pendant environ <strong>45min<\/strong>. <span style=\"color: #bf4500;\">(Le plus simple pour \u00e9tuver est de mettre de l&#8217;eau bien chaude voire bouillante dans un cul de poule, placer le cul de poule dans le fond du four \u00e9teint et positionner sa brioche sur la grille du milieu. Fermer le four et il sert d&#8217;\u00e9tuve)<\/span>.<\/p>\n<p>Une fois que le baba a doubl\u00e9 de volume, sortez le du four \u00e9teint, pr\u00e9chauffez le four chaleur tournante \u00e0 <strong>160\u00b0C<\/strong> et faire cuire <strong>25min<\/strong>.<\/p>\n<p>Laissez les babas refroidir et s\u00e9cher \u00e0 temp\u00e9rature ambiante. Puis laissez les imbiber pour qu&#8217;ils fassent <strong>1,5<\/strong> fois leur volume de d\u00e9part.<\/p>\n<h3><span style=\"color: #bf4500;\">FINANCIERS <\/span><span style=\"color: #bf4500;\">J-7<\/span><\/h3>\n<p>C&#8217;est la recette d&#8217;Amaury Guichon<\/p>\n<ul>\n<li>125g de poudre d&#8217;amandes<\/li>\n<li>295g de sucre glace<\/li>\n<li>75g de farine<\/li>\n<li>245g de blancs d\u2019\u0153ufs<\/li>\n<li>20g de miel<\/li>\n<li>245g de beurre<\/li>\n<\/ul>\n<p>Pr\u00e9chauffez le four chaleur tournante \u00e0 <strong>165\u00b0C<\/strong>.<\/p>\n<p>Dans le batteur avec la feuille ou dans un saladier \u00e0 la main, mettre <strong>125g<\/strong> de poudre d&#8217;amandes, <strong>295g<\/strong> de sucre glace et <strong>75g<\/strong> de farine J-1<\/h3>\n<ul>\n<li>250g de chocolat au lait <span style=\"color: #bf4500;\">(ou noir si on pr\u00e9f\u00e8re)<\/span><\/li>\n<li>42g d\u2019huile de p\u00e9pin de raisin<\/li>\n<li>208g de beurre de cacao<\/li>\n<\/ul>\n<p>Dans un pichet, mettre <strong>250g<\/strong> de chocolat au lait et <strong>42g<\/strong> d\u2019huile de p\u00e9pin de raisin.<\/p>\n<p>Dans une casserole ou au micro onde, faire fondre <strong>208g<\/strong> de beurre de cacao.<\/p>\n<p>Versez le beurre de cacao dans le pichet et mixez le tout ensemble.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-medium Je m&#8217;acharnais avec mon mixeur plongeant Kenwood pourtant vraiment bien&#8230; mais le jour o\u00f9 j&#8217;ai vu passer une vente priv\u00e9e Bamix, j&#8217;ai saut\u00e9 sur l&#8217;occaz!! Et bien je n&#8217;ai pas \u00e9t\u00e9 d\u00e9\u00e7ue.
