La seule contrepartie? Je devais lui faire une p\u00e2tisserie! Ce n&#8217;\u00e9tait pas cher pay\u00e9 pour l&#8217;accueil que nous avons eu! Ayant eu vent de son amour pour le chocolat je me suis dit que j&#8217;allais lui proposer cette petite merveille de Fran\u00e7ois Perret, chef p\u00e2tissier du Ritz, \u00e9lu &#8220;meilleur p\u00e2tissier restaurant&#8221; du monde en cette fin d&#8217;ann\u00e9e. Pourquoi je vous raconte tout \u00e7a? Car j&#8217;ai v\u00e9cu le moment le plus magistral depuis que je fais de la p\u00e2tisserie&#8230; arriv\u00e9e sur place, je demande une balance pour accomplir ma t\u00e2che, la r\u00e9ponse ne se fait pas attendre : &#8220;ah ma pauvre ch\u00e9rie, je l&#8217;ai jet\u00e9e la semaine derni\u00e8re elle \u00e9tait fichue. ambiante<\/li>\n<li>90g de cassonade<\/li>\n<li>70g de farine<\/li>\n<li>20g de poudre de cacao<\/li>\n<li>2g de fleur de sel<\/li>\n<\/ul>\n<p>Dans le bol du batteur, mettez tous les ingr\u00e9dients ensemble et m\u00e9langez les avec la feuille\u00a0<span style=\"color: #bf4508;\">(le beurre doit absolument \u00eatre \u00e0 temp\u00e9rature ambiante voir pommade pour pouvoir \u00eatre farine T55<\/li>\n<li>4 oeufs<\/li>\n<\/ul>\n<p>Ici vous allez avoir deux fois plus de p\u00e2te \u00e0 choux par rapport \u00e0 la quantit\u00e9 de cr\u00e9meux, car il est quasiment impossible de r\u00e9ussir une p\u00e2te \u00e0 choux sans ces quantit\u00e9s minimum <span style=\"color: #333333;\">(je m&#8217;acharnais \u00e0 en faire peu et \u00e7a fonctionnait une fois sur deux&#8230; j&#8217;ai enfin compris!)<\/span>. Ce n&#8217;est pas grave, vous pochez les autres \u00e9clairs (ou choux) et vous les congelez!
